BLUE BOILING PEAS
These dried peas are used to make Mushy Peas - an old British favourite! They can also be used to make a pea and ham soup.
Recipe:
225g Blue Boiling Peas
2 teaspoons baking soda
2 cups boiling water
salt & pepper to taste
Method:
Rinse Blue Boiling Peas thoroughly, place into a large bowl and add water and baking soda. Stir until baking soda dissolves.
Soak for a minimum of 12 hours.
Drain and rinse well, then transfer to a large pot.
Cover with water (around 2 cups) and bring to a boil. Lower the heat and simmer uncovered for approximately 30 minutes, or until they soften and turn mushy.
Season as required and mash with a fork to desired consistency. You can also add some butter, cream or sugar for an extra rich dish!
Serve HOT with Fish & Chips or a tasty Pie - yum!
